Beer Battered Fish

Recipe Ingredients:

1/2galice water
2Tbspeverglades seasoning
2lbsfish fillets (catfish works well)
2pkgMartha White Flap-Stax pancake mix
2canbeer (cold)
2Tbsptabasco sauce
1/4cupkosher salt (iodized leaves fish bitter)
peanut oil for frying

Recipe Instructions:

1.   Dissolve salt in water and soak fillets for hour. Drain, rinse, pat dry with paper towel and cut into pieces. Sprinkle with limejuice and refrigerate for 2 hours.
2.   Mix pancake batter with beer and Tabasco sauce. Place in freezer for hour. (The last half hour of the step above).
3.   Heat oil; mix flour and cornstarch in a large zip-lock bag with everglades seasoning. Put fish in bag and shake to coat fish. Dip fish in batter and let drip some. Fry until golden brown.
