Mexican: Fajita Steak Salad -

Fajita Steak Salad

Recipe Ingredients:

1Tbspfajita seasoning (The Spice Hunter)
11-lb flank steak, about 1-in. thick
2mediumears corn, shucked
1mediumsweet onion, cut in thick slices
1largered bell pepper, quartered
nonstick cooking spray
1/3cuplight oil & vinegar dressing
3Tbsplime juice
1avocado, cut in chunks
1bag(10 oz) cut-up hearts of romaine or 8 cups torn romaine
1cuplightly salted tortilla strips

Recipe Instructions:

1.   Heat outdoor grill. Mix fajita seasoning and salt in small cup; rub on both sides of steak.
2.   Coat corn, onion, and pepper with nonstick spray. Grill steak 5 minutes per side for medium rare. Grill corn, onion, and pepper 10 minutes or until nicely charred, turning as needed.
3.   Mix dressing with lime juice. Cut onion and pepper; cut corn off cob. Toss grilled vegetables, avocado and 2 Tbsp dressing in medium bowl.
4.   Thinly slice steak across the grain. Divide romaine among plates; top with vegetable mixture and steak. Drizzle salads with rest of dressing; top with tortilla strips.
