Ricotta Filled Baked Manicotti (filling)

Recipe Ingredients:

a fist full of grated Locatelli & Mozzarella cheese
chopped FRESH parsley
4eggs, beaten

Recipe Instructions:

1.   Mix above ingredients together well!
2.   Take cooked manicotti dough and lay a heaping spoonful of ricotta in the center and roll the dough around like a tube.

NOTE: You may freeze the tubes at this time for use at a later date!
3.   Put them in layers with pasta sauce between layers (go real light with the sauce). Top with sauce, Locatelli and Mozzarella cheese. Bake at 375 degrees for about 20 minutes.

NOTE: If shells were frozen, make sure they have thoroughly thawed before baking!
