Italian: Pasta Sauce -

Pasta Sauce

Recipe Ingredients:

1/4cupolive oil
1/2cupmedium onion, chopped
8can(28oz) peeled plum tomatoes
4can(12oz) tomato paste
2bay leaves

Recipe Instructions:

1.   Set out a large saucepot (16qt) with lid. Heat in saucepot 1/4 cup olive oil medium heat (Use #3 heat). Add and cook until lightly browned 1/2 cup onion (medium size, chopped).
2.   Place the contents of each 28oz can of plum tomatoes (one at a time) in a blender. Set on grind for 3 short bursts. Pour in from blender the mixture of peeled plum tomatoes. Add 4 tablespoons salt and 2 bay leaves broken into quarters. Add meatballs, sausage or other meat item to sauce after putting in tomatoes.

Note: After adding meatballs and sausage, turn heat down to #1.

Cover saucepot and simmer over low to medium heat, about 2 hours.
3.   Add four 12oz cans of tomato paste.
Simmer covered over low heat, stirring occasionally, about 2 hours, or until thickened.

Note: If sauce becomes too thick, add 1/2 cup water.

Remove bay leaves from sauce. Serve over cooked pasta.
