Italian Pepper Steak

Recipe Ingredients:

2peppers, 1 green & 1 red
1/2cuponion, chopped
2clovegarlic, minced
3/4lbsbeef tenderloin or boneless beef top sirloin, sliced 1/2 - 3/4 inch thick
2Tbspolive oil
3/4cupbeef broth
1/2tspdried oregano or basil, crushed
2mediumtomatoes, diced

Recipe Instructions:

1.   Cut peppers into thin strips and cook with onion and garlic in skillet with two tablespoons of olive oil on #5 heat.
2.   When crisp-tender (about 4 minutes), remove vegetables and put meat in skillet. Add more oil, if necessary. Sprinkle meat lightly with salt. Cook over medium-high heat about 4 minutes on each side or until slightly pink in center. Transfer to serving platter. Keep warm.
3.   Cool skillet for 1 minute. Carefully add beef broth and oregano or basil. Bring to boil and boil gently, uncovered, over medium heat 2 to 3 minutes until broth is reduced to 1/3 cup, scraping up browned bits in pan. Remove from heat.
4.   Stir in cooked pepper mixture and tomatoes. Serve on platter with meat. Serves four.
