Chicken Parmesan

Recipe Ingredients:

1lbschicken breast, cut to about 1/2 inch thick
1 1/3cupunseasoned breadcrumbs
1/3cupgrated parmesan-reggiano cheese
3eggs, well beaten
little bit of half & half
1/4tspfresh ground pepper
3Tbspolive oil
marinara sauce (see Marinara Sauce recipe)
grated mozzarella cheese


Recipe Instructions:

1.   Pound chicken to about 1/8 inch thick using a mallet with the chicken in between 2 sheets of plastic wrap. Cut the chicken into about 3 X 3 or 4 X 4 pieces.
2.   Prepare a bowl with the breadcrumbs and Parmesan cheese. Prepare another bowl with the well beaten eggs, half & half and pepper. Dip the chicken into the egg mixture and then into the crumb mixture.
3.   Pour 3 tablespoons of olive oil into a skillet set to medium heat (#5). Add chicken to the skillet and slowly brown on both sides (about 1 2 minutes per side). Remove and dry on paper towels.
4.   Arrange chicken into 11 x7 baking dish. Pour Marinara sauce over chicken. Top with grated mozzarella and Parmesan cheese. Bake at 350 degrees for 15 to 20 minutes or until cheese is melted.
