Italian: Chicken Marsala I -

Chicken Marsala I

Recipe Ingredients:

3lbschicken breast (boned) cut into 1/2 inch
1canchicken broth
1/2largeonion, sliced
1stick of butter
1/2cupmarsala wine (or substitute white sherry
1jarsliced mushrooms
parmesan cheese
corn starch

Recipe Instructions:

1.   Take 1 stick of butter and melt it in a frying pan. A few tablespoons of peanut oil if using a Wok. Add large onion sliced in rings and cook until glossy.
2.   Remove onions from pan or wok and fry chicken until white. Remove chicken and add 1 can of chicken broth. Put chicken and onions in and mix together. Simmer a few minutes and add cup white wine (Marsala or Sherry). Add chopped parsley. Sprinkle with oregano and add salt. Add 1 jar of sliced mushrooms.
3.   Simmer then add 4 tablespoons of cornstarch to thicken (it may need a little more to thicken). Serve over cooked noodles or rice and sprinkle with Parmesan cheese.
