Italian: Cannoli (shells) -

Cannoli (shells)

Recipe Ingredients:

peanut oil
2eggs, well beaten
2Tbspwhite vinegar
1lemon rind
3Tbspshortening (vegetable oil)
1/2cupwhite wine
1egg white

Recipe Instructions:

1.   Mix flour, sugar, cinnamon, salt and lemon rind with whisk. Add shortening and eggs. Mix by hand until crumbly. Add wine and vinegar - mix with hands.
2.   Form into a large ball. Turn dough onto lightly floured surface and knead. Wrap in wax paper and refrigerate for 30 minutes.
3.   Pour 1 egg white into a small glass with pastry brush.

Break off a piece of dough and roll as thin as a pie shell (1/8 inch thick).

Cut out a 5 x 3 inch oval (like a football) out of cardboard.
4.   Spray Pam on broomstick.

Wrap around 6-inch broomstick and seal with egg white using pastry brush.

Fry 3 at a time in peanut oil at 375 degrees.
5.   When partly browned, let them drain in basket and using a washcloth to hold the stick and a towel to hold the shell, remove the stick using a twisting motion.

Place shells back in basket and continue frying until done (they will float to the top).

Let them drain in basket and remove with tongs and place on paper towel to dry and cool.

Makes 22 26 shells
