Ham and Cheese Stuffed Potatoes

Recipe Ingredients:

4largepotatoes
1/2cupmilk
1pkg(3oz) cream cheese, softened
2Tbspbutter or margarine
1/2cupshredded swiss cheese
1/2cupshredded cheddar cheese
1/2to 1 tsp salt
1/2tsppepper
1cupcooked diced ham
2tspchopped fresh chives


Recipe Instructions:

1.   Place potatoes in a lightly greased aluminum foil-lined 15x10-inch jelly roll pan. Bake at 400F for 1 hour or until tender; cool 30 minutes.
2.   Cut each potato in half lengthwise; carefully scoop out pulp into a large bowl, leaving a 1/4-inch-thick shell.
3.   Beat pulp, milk, cream cheese, butter, swiss cheese, cheddar cheese, salt, and pepper at medium speed with an electric mixer until blended; stir in ham and chives. Spoon mixture into potato shells.
4.   Bake at 350F for 15 minutes.
