Authentic Italian Meatballs

Recipe Ingredients:

2cupwater
2tspsalt
1Tbspolive oil
5lbsground beef
3eggs
2tsppepper
5Tbsplocatelli cheese, grated
2cupbreadcrumbs
5Tbspfresh parsley, chopped


Recipe Instructions:

1.   Add to large bowl, 5 pounds ground beef and 1 cup water. Mix by hand.
Add 1-cup breadcrumbs and mix by hand.
2.   Add 1-cup water and mix by hand.
Add 1-cup breadcrumbs and mix by hand.
3.   Add 3 eggs and mix by hand. Add 5 tablespoons of grated Parmesan Reggiano or Locatelli cheese and mix. Add 5 tablespoons of parsley and mix. Add 2 teaspoons of salt and mix. Add 2 teaspoons of pepper and mix.
4.   Heat 12-inch skillet to medium heat (#4) or Electric fry pan set to 325 degrees.
Add 1-tablespoon olive oil. Add olive oil as needed to keep skillet from going dry. Shape meat into balls and fry. Electric fry pan will take 16 meatballs.
Use two forks to turn meatballs. When browned, remove with tongs into a bowl lined with paper towels. Add to pasta sauce and serve over cooked pasta.
