Pizzelle

Recipe Ingredients:

6eggs
1/4cupvegetable oil
1/2stick melted butter or margarine (1/2 stick = 4 Tbl)
1 1/2cupsugar
1/4cupvegetable shortening, melted
2tspbaking powder
1/4tspsalt
1 1/2tspflavoring (anise, lemon, vanilla or almond extract)
2cupflour


Recipe Instructions:

1.   Blend ingredients together, adding one at a time.
2.   Spray grids with Pam and turn control knob to highest setting. When ready light comes on, drop batter by the teaspoonful onto center of each cookie section. Close lid, light will go on and off during baking. This is normal. When closing the lid, press down gently to spread out the batter.
3.   Cookies will take approximately 45 60 seconds or until lightly brown (Discard first batch, as it will absorb oil). Allow cooling on wire rack or towels. Dust with powdered sugar.
4.   Cookie may be served flat or rolled tightly into a cylinder. Cookie must be hot during rolling and held in shape until cool. Makes 4 6 dozen.

Note: For best results, make a soft batter. For variation, substitute anise or other flavor for vanilla. Finely chopped nuts may also be added. Pizzelles can be made in advance will keep indefinitely. Pizzelles may be frozen if desired, without loss of flavor.
