Turkey Tenderloins & Apricot Sauce

Recipe Ingredients:

1pkg(1 1/4 lb) turkey tenderloins (2 tenders)
1/4tspeach salt & freshly ground pepper
2/3cupapricot preserves
2clovegarlic, minced
2Tbspdijon mustard
2Tbspreduced-sodium soy sauce

Recipe Instructions:

1.   Preheat oven to 400F. You'll need a roasting pan lined with foil and coated with nonstick spray.
2.   Season turkey tenderloins with salt and pepper; place in the prepared pan.
3.   In a small bowl, combine remaining ingredients. Mix well; spoon some over turkey. Roast 35 to 40 minutes, basting frequently with the sauce, until an instant-read thermometer inserted into the thickest part registers at least 160F.
4.   Let turkey rest for 10 minutes before cutting it crosswise into 1/2-inch-thick slices.
