Sweet & Sour Chuck Roast

Recipe Ingredients:

1(3 lb) boneless chuck roast, trimmed
1Tbspvegetable oil
2clovegarlic, minced
2Tbspfirmly packed dark brown sugar
1bottle(12oz) chili sauce
1/4cupred wine vinegar
2mediumonions, thinly sliced

Recipe Instructions:

1.   Sprinkle salt and pepper evenly over roast. Brown roast 2 minutes on each side in hot oil in a Dutch oven over medium-high heat.
2.   Stir together garlic, sugar, ketchup, chili sauce and vinegar. Pour over roast. Add onions.
3.   Bake, covered, at 350F for 2 1/2 to 3 hours or until tender and meat thermometer registers 160F.
