Stuffed Flank Steak

Recipe Ingredients:

5Tbspolive oil, divided
1smallonion, chopped
2clovegarlic, minced, divided
1can(28oz) crushed tomatoes
2Tbsptomato paste
1/4tspred pepper flakes
1/3cupchopped fresh basil leaves
1/4cupItalian bread crumbs
1/4cupgrated Romano cheese
1Tbspchopped FRESH parsley
1Tbspchopped fresh basil
1 1/2lbsflank steak

Recipe Instructions:

1.   Heat 2 Tbsp oil in a large nonstick skillet; add onion and one clove garlic. Cook and stir 5 minutes or until tender. Reduce heat to low. Add tomatoes, tomato paste, sugar, and red pepper flakes; cover and simmer 30 minutes. Add 1/3 cup basil; simmer 5 minutes more.
2.   Meanwhile, combine bread crumbs, cheese, parsley, one Tbsp basil, and remaining 1 clove garlic in a medium bowl; stir in one Tbsp oil. Preheat oven to 450F.
3.   Place flank steak in a large baking dish. Sprinkle bread crumb mixture evenly over the steak to cover the top evenly. Starting at the short end, roll up steak, and tie tightly with food-grade string to secure the steak roll. Season with salt and pepper to taste.
4.   Heat remaining 2 Tbl oil in a large nonstick skillet over medium-high heat; cook meat 5 minutes on each side, turning occasionally. Place on a baking sheet; bake 15 to 20 minutes or until desired degree of doneness. Remove twine and slice evenly. Spoon sauce evenly over steak slices.
