Roast Beef Crostini

Recipe Ingredients:

1Tbspbutter or margarine
2clovegarlic, minced
1Tbspextra virgin olive oil
17-inch French baguette, cut into 24 slices (1/4 inch each)
1/3cuplight peppercorn parmesan spreadable cheese*
2mediumroma tomatoes, cut into 24 very thin slices
1/4lbsshaved roast beef, torn into 24 pieces
1Tbspshredded parmesan or finely chopped parsley (optional)

Recipe Instructions:

1.   Preheat oven to 375F. Combine butter and garlic in small microwave-safe bowl. Microwave at high power 12 to 20 seconds or until butter melts. Stir in olive oil.
2.   Place baguette slices on broiler pan or rack (placing bread on rack in oven allows both sides to crisp slightly); brush with olive oil mixture. Bake 7 to 9 minutes or until lightly crisped. Do not overbake. Cool.
3.   Spread each toast lightly with dip (about 1 tsp each). Top each with tomato slice. Pile roast beef evenly on toasts. Sprinkle lightly with parmesan or parsley, if desired.

Yield: 24 servings

*1/3 cup soft (from tub) light cream cheese with 1 Tbsp shredded parmesan and 1/4 to 1/2 tsp coarse ground pepper can be substituted.
