Mussels Fra Diavolo
Shrimp may be substituted for the mussels.

Recipe Ingredients:

12ozlinguine
1jar(25 oz) fra diavolo sauce or other spicy marinara
2lbsscrubbed mussels, beards removed
chopped chives or parsley


Recipe Instructions:

1.   Cook linguine as package directs in large pot of salted boiling water.
2.   Meanwhile, heat sauce over medium-high heat in large straight-sided skillet until sauce is simmering. Add mussels; cook, covered, 8 minutes or until mussels are opened. Discard any mussels that don't open.
3.   Drain linguine, spoon mussels with sauce on top and sprinkle with chives.

Serves 4

(Variations: 1. Substitute 1 lb peeled large shrimp for the mussels.
2. Add 1/3 cup white wine when heating the sauce.
3. Serve mussels over soft polenta instead of pasta.)
