Beef Tenderloin with Blue Cheese Butter

Recipe Ingredients:

12 1/4 - 2 1/2 lbs trimmed beef tenderloin
1/2tspblack pepper
3/4tspsalt
1Tbspunsalted butter, softened
Ingredients for Blue Cheese Butter:
1/4cupcrumbled blue cheese
3Tbspunsalted butter
2Tbspchopped parsley


Recipe Instructions:

1.   Preheat oven to 350F. Spread butter over beef and sprinkle with salt and pepper.
2.   Place on a wire rack inside of a rimmed pan. Roast for 40-50 minutes or until desired doneness.
3.   Blue Cheese Butter:

Mix all the ingredients together. Let stand 10 minutes then spread over roast or top each slice with butter.
