Banana Loaf

Recipe Ingredients:

unsalted butter, for greasing
1cupwhite self-rising flour
3/4cuplight brown self-rising flour
3/4cuppacked raw brown sugar
1/2tspground cinnamon
1/2tspground nutmeg
2largeripe bananas, peeled
3/4cuporange juice
2eggs, beaten
4Tbspcanola oil
sea salt
sliced banana or chopped walnuts

Recipe Instructions:

1.   Preheat oven to 350F. Lightly grease and line a 1-lb loaf pan.
2.   Sift the flours, sugar, a pinch of salt, and the spices into a large bowl.
3.   In a separate bowl, mash the bananas with the orange juice, then stir in the eggs and oil. Pour into the dry ingredients and mix well.
4.   Spoon into the prepared loaf pan and bake in the preheated oven for 1 hour. The loaf is done when a toothpick inserted in the center comes out clean. If not, bake for an additional 10 minutes and test again.
5.   Remove from the oven and let cool in the pan. Turn the loaf out, slice, and serve with honey and sliced banana or chopped walnuts.

Yield: 1 loaf.
