Crabmeat Salad in Grilled Vidalias

Recipe Ingredients:

4largeVidalia onions, divided
1celery rib, diced
1/2cuplight mayonnaise
3Tbspfresh lemon juice
3/4tspcreole seasoning
1/4tspground pepper
2pkg(8oz) lump crabmeat, drained
crackers and fresh fruit (optional)

Recipe Instructions:

1.   Peel onions; cut off bottoms just enough to form a flat surface. Carve out onions, leaving a half-inch shell. Set shells aside; chop insides of onions and set aside.
2.   Grill onion shells over medium-high heat 5 minutes on each side or until tender.
3.   Stir together 2 Tbl reserved chopped onion, celery, and next 4 ingredients. Gently stir in crabmeat. Spoon mixture evenly into Vidalia shells. Serve immediately with crackers and fresh fruit, if desired.
